Ode to Nutritional Yeast, Lovingly Crafted by The Selfish Vegan

Nutritional Yeast

To properly enjoy this “poetry,” you’ll need to visualize me in dramatic repose on a gilded chaise lounge, reciting orally the following words:

A love for boosted yeast I can’t deny,

The taste is something that you shouldn’t miss.

What salty cheesy goodness I have found,

To layer heaps of flakes on popcorn’s bliss!

(insert dramatic pause followed by a wistful gaze at a bowl of popcorn)

B vitamins my love supplies in glut,

A protein source but not a mammal’s life.

I’ll never be without this tasty snack,

I’ll never fear for vitamins I lack!

Third grade level iambic pentameter aside, I think nutritional yeast might be my most exciting discovery since learning about Fluff in kindergarten.  Man that stuff was good.  And to think, I came this close to missing out altogether.  In my ignorance, I very nearly bought regular brewers yeast.  Doing so would have been a towering mistake that would have tasted rather…. different.  Allow me to re-iterate:  Do not put brewers yeast on popcorn!  Although if you did, you wouldn’t wind up needing an overindulge-ers anonymous support group like I do.

So, do any of you have a favorite use for nutritional yeast?  Please, by all means…..

    nutritional yeast is fabulous on anything with spaghetti sauce….and a great topping on garlic bread. if you haven’t guessed by now, i have a deep love for all food italian..ciao bella ;-)

    Yes! to nutritional yeast on popcorn. I also add dried basil, dill, oregano, and salt & pepper to make what we call “hippie popcorn”. Sooo delicious!

    Thanks for the tip! For those of us far more ignorant about the kitchen, what in the name of my sister’s shoes is nutritional yeast? Popcorn is a fav in this home, so anything to add more vitamins for my kids (husband included).

  8. “nootch” is awesome in scrambled tofu, vegan quiche, in sauces, in vegan mac’n'cheese, as a coating for marinated tofu before frying, in casseroles, soups, cereals, sprinkled on just about anything. I can hardly think of a single food that doesn’t benefit from the judicious application of “nootch”. Except possible chocolate cheesecake, although I’m sure somebody out there has found a way to include it in all kinds of desserts.

    I love nooch, and think Judith covered most of the basics. I love making a huge salad with a whole bag of mixed steamed vegetables over spinach, add in an avocado and cover the whole thing with nooch while it’s warm. It’s like a cheesy, veggie delight.

    Stir it in rice with butter or even oatmeal for a savory oat dish (with eggs, veggies, hot sauce, butter, etc.)

    So good!
