If ever you need a salty snack that won’t make you hate yourself, kale chips are it. I know, you already hate yourself for caving to mainstream pressure; you must have an iPhone 4 or you’ll die! But just in case you’re wrong, and slogging along with the last phone you mortgaged your home for doesn’t actually sentence you to death, wouldn’t it be nice if you ingested some lutein and zeaxanthin to protect your eyes? You’ve probably already done quite a bit of damage from staring at the inferior screen on your iPhone 3G, you may as well try to counteract it. And what about antioxidants, calcium and carotene? Guess what? Kale has lutein and zeaxanthin! And antioxidants, calcium and carotene! I know, it’s like I’ve just given you a gigantic leaf-shaped gift.
So if you stayed up all night trying to pre-order an iphone and sending hate mail to AT&T, and you plan on doing it again tonight, it’s probably time to put down the Cheetos. Don’t worry, you can take your laptop into the kitchen and you’ll only be there for a few minutes. You can refresh while you bake.
Just tear pieces of (washed) kale from the stalk and throw them onto a parchment lined baking sheet. I use a mister to coat them in olive oil and then sprinkle on the sea salt. If you don’t have an oil mister you’re screwed, but I suppose you could just toss the leaves in olive oil manually. Bake at 350 for around 10 minutes and they should be nice and crispy. I like them browned; you can decide for yourself. Dust on some nutritional yeast and it’s go time. Just don’t forget to refresh– I have a feeling that this time it’s going to work.

You sound exactly like me last night. Until I realized Apple is much smarter than AT&T and I went to their website and was upgraded and paid for in under 3 minutes. I wasted all that time refreshing yesterday!!!!

I love Kale chips. Adding nutritional yeast is a nice touch. I can’t wait till the kale in my garden is ready for harvest. I will certainly be making kale chips. I’m not a vegan but I so love veggies and I’m always looking for interesting ways to prepare them.
