Macaroons

A few weeks ago we visited some relatives in The City where there just so happen to be scads of exclusively vegan restaurants.  What the frick?  I’m a little put out that such a bounty exists when we basically don’t go to restaurants anymore unless we feel like having Chinese food or Indian, which I don’t particularly like.  Sigh.

Regardless, I’m not here to complain.  It was probably the best takeout I’ve ever had, vegan or non.  So good that it was mildly depressing because it really highlighted just how amateur our efforts have been.  No biggie, though; I totally copied their macaroons.  That’s right, they taste the same.  I’m basically a genius.  And just because I love you, here’s the recipe:

Vegan Macaroons

Combine:

  • 1/2 cup raw sugar
  • 1/4 cup almond or soy milk
  • 1 tablespoon golden flax meal
  • 1 tablespoon chia seeds
  • 1 generous tablespoon brown rice syrup
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
  • 1/2 teaspoon salt

Add:

  • 1 1/2 cups shredded coconut
  • 6 tablespoons all-purpose flour

Bake:

  • stack two cookie sheets and line the top with parchment paper
  • use a small cookie scoop to portion out 12-15 macaroons
  • bake at 350 degrees for 12 minutes
  • they’re done when they start to turn golden on the top

Embellish:

  • melt vegan chocolate chips in a double boiler
  • dip the macaroons once they’ve cooled

  2. Whoa, that looks and sounds delish. Could one replace the chia seeds with more flax (even if it wouldn’t be the exact same, but do you think it would work)?

  3. If you want to avoid the chia seeds, I’d just omit them without substituting anything in. They don’t add flavor or texture really, I just like the nutrition and the visual interest :) Enjoy!
