Pesto

I wonder what happens to that man and woman if the basil is substituted with spinach?  Does Utopia collapse?  Hopefully there aren’t any love-related repercussions, because the pesto recipe I just discovered in the back of The Urban Vegan cookbook is (in my totally ingenuous opinion) better than regular pesto.  Maybe it’s the subtle anise flavor, but too much traditional pesto turns me off and that’s not going to make anyone love me always.

This “winter pesto” is made primarily with fresh spinach.  We had a bunch leftover so I threw it in the cuisinart with heinous amounts of raw garlic and a few other secret ingredients that are not that difficult to guess.  I might roast the garlic a bit next time, but this is not a bad way to add the nutritional benefits of spinach to your pasta without actually attempting to chew through three overflowing cups of uncooked spinach leaves.

I brought a basil plant home from the store a few weeks ago thinking that we’d have fresh herbs to add to our dinner all the time.  Delightful!  In what can only be interpreted as a declaration of my unlovability, it died within two days.  I’ll just have to take my chances with spinach and garlic breath.  Wish me luck.

    *for those of you unfamiliar with the canadian (or so I’ve been told) term ‘whack’, it means a large amount.
